Description

Hacienda (farm) Venecia belongs to a family with four generations of coffee growing experience.

The plantation is located in one of the more recognized growing regions of Colombia, located within the mountain ranges of Caldas.

Managed by a team of professionals each specializing in their own field (agronomy, farming, environment, etc.), close to 100 people reside on the estate and over 400 workers are hired during peak harvesting season.

Their social development programs and actions toward sustainability have had a great impact on the workers and the high-quality coffee they produce.

Their deep appreciation for the land and its environment also means they take great measures to minimize their environmental impact at the processing level.

A Full-City roast reveals this coffee's vanilla and hazelnut notes.

Washed with Fermentation: Once harvested, the coffee cherries go straight to the mill to be sorted and processed through a series of steps. First, they’re submerged in water allowing the unripe cherries to float to the top and be removed. All ripe cherries move on to the depulping stage, removing their skin and the pulpy layer beneath it. Then, to soften and remove the remaining sticky mucilage, the resulting beans are placed in fermentation tanks and soaked for periods of 24-36 hours. The final steps consist of drying the beans, either mechanically or by sun drying. Once done, they are sorted, graded and bagged.
