This coffee is cultivated in the heart of the Escambray plateaus, located in Cuba's Guantanamo region. Cuba’s narrowly shaped landscape facilitates the circulation of the cool trade winds coming from the Atlantic. The coffee grows under the forest canopies in very rich humus soil. Given that the Cuban people are exceptionally patriotic and take great pride in their work and their land, the quality of these beans is clear evidence of that. As for this coffee's plantation, control and development are treated with extra care. Growers place a great deal of importance on maintaining and expanding their natural growing method and artificial fertilizers are never used. A Full City roast reveals this coffee's delicate sweetness and hints of chocolate. Great for espresso and drip extractions. |

Washed with Fermentation: Once harvested, the coffee cherries go straight to the mill to be sorted and processed through a series of steps. First, they’re submerged in water allowing the unripe cherries to float to the top and be removed. All ripe cherries move on to the depulping stage, removing their skin and the pulpy layer beneath it. Then, to soften and remove the remaining sticky mucilage, the resulting beans are placed in fermentation tanks and soaked for periods of 24-36 hours. The final steps consist of drying the beans, either mechanically or by sun drying. Once done, they are sorted, graded and bagged. |
