Welcome to the world of coffee excellence, where the artistry of our Colombian Red Bourbon comes to life. Cultivated by the same group of skilled farmers responsible for our renowned Colombian Supremo and Excelso varieties, this coffee embodies the culmination of their expertise. Nestled within a picturesque 12-hectare plantation, our meticulous process results in a cup of unrivaled quality, characterized by its impeccable balance and optimal taste.

This exceptional coffee is carefully prepared using a distinctive process that includes 60 hours of cherry oxidation, followed by 60 hours of anaerobic fermentation in bags with microorganisms extracted from the same coffee, and finally, a further 12 hours of oxidation.

IN TERMS OF TASTE

Distinguished by its deep red hue, a testament to its high sugar content and enhanced flavor potential, this unique variety boasts balanced acidity, a full-bodied profile, and enchanting notes of red fruit, caramel, and chocolate.

 

CHERRY OXIDATION (60 HOURS) :

The process starts with hand-picking only the ripest coffee cherries from the Red Bourbon plants. These cherries undergo a meticulous 60-hour period of oxidation, where they are carefully spread out to rest and develop flavor complexities naturally. The extended oxidation allows the cherries to reach a perfect state of ripeness, setting the stage for an exceptional cup of coffee.

ANAEROBIC FERMENTATION (60 HOURS) :

After cherry oxidation, the next step is the fascinating anaerobic fermentation process. The selected cherries are placed in bags along with microorganisms extracted from the same coffee. These microorganisms kickstart the fermentation process. The anaerobic environment in the bags intensifies the fermentation, creating unique flavor compounds

ADDITIONAL OXIDATION (12 HOURS) :

Following the anaerobic fermentation, the coffee undergoes an additional 12-hour period of oxidation. This final step helps to stabilize the flavors, ensuring a harmonious and well-rounded taste profile in the finished product. The Result: Exceptional Colombian Red Bourbon Green Coffee !
